Chef Alex Iverson & Jazmine Coke's Chile Fresh Pumpkin Leek Soup

Chef Alex Iverson and Sous Chef Jazmine Coke of The Hungry Goddess held a Chile Olive Oil dinner party and created fantastic Chile fresh recipes for the occasion. This Pumpkin Leek Soup served within the pumpkin is a standout this fall!


  • 1 medium-large pumpkin
  • 2 leeks, cleaned and chopped
  • 2 shallots, chopped
  • 4 cloves garlic,chopped
  • 3 carrots, chopped
  • 1/4 cup bold Chile Olive Oil
  • 2 tbs butter
  • 1 qt half and half
  • 1 qt milk
  • 2 sprigs rosemary
  • 2 bay leaves
  • 7 sprigs lemon thyme
  • 1/4 cup chopped parsley
  • 1/2 lb smoked Fontina cheese


  • Preheat oven to 350F 
  • Cut off top of pumpkin and clean out seeds and guts (save seeds for toasting) 
  • Brush pumpkin with olive oil and salt and roast for 2 hours
  • When the pumpkin in done roasting, scoop out as much as the pumpkin flesh as you can without compromising the outer skin
  • In a soup pot on medium heat, melt butter and Chile Olive Oil
  • Add shallots, garlic, carrots rosemary and bay leaves and sweat until the shallots become translucent
  • Add in the pumpkin flesh, leeks, half and half, and milk
  • Reduce on medium-low heat until the leeks are tender
  • Add in parsley
  • Put the soup in the blender and blend until smooth (will take a couple times)
  • Serve the soup inside the hollow pumpkin and top with toasted pumpkin seeds and smoked fontina cheese
