Chile Extra Virgin Olive Oil Cake with Fig & Strawberry Marmalade

Chef Alex Iverson and Sous Chef Jazmine Coke of The Hungry Goddess held a Chile Olive Oil dinner party and created fantastic Chile fresh recipes for the occasion. This dessert is a perfect end to any meal!


  • Cake:
  • 6 large eggs
  • 1 cup honey
  • 1½ cups almond milk
  • ¾ cup half and half
  • ¾ cup milk
  • 1 cup smooth chile olive oil
  • 1 cup bold chile olive oil
  • ½ cup fresh squeezed orange juice
  • zest of 1 orange
  • 3 cups flour
  • 1 cup cornmeal
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • pinch of salt
  • Marmalade:
  • 15 figs, sliced
  • 7 strawberries, sliced
  • 1 tbs butter
  • 1 tbs smooth chile olive oil


  • Cake: 
  • Preheat oven to 350F
  • Whisk eggs and honey unitl blended
  • Add milk, Chile Olive Oil, orange juice and orange zest, mix well
  • Stir in flour, cornmeal, baking powder, baking soda, and salt, do not overmix  
  • Pour batter into an oiled 9" x 13" baking pan and bake 40-50 minutes 
  • Marmalade: 
  • Combine butter and Chile Olive Oil in saucepan on medium heat
  • Add in sliced figs and strawberries
  • Reduce on low heat for 25-30 minutes
  • Serve cake with marmalade and fresh whip cream (optional)
